25 days of cookies {Cookie #8} Mint-Dipped Oreos

This idea comes from my friend, Niki.  She had nine (!) children and still has time to give me recipe ideas.  Asher and I ended up making these when everyone else went to bed, and we did it start and finish in about 30 minutes.  All I did was melt the Andes mint pieces and he did the rest.  If you need something quick to take to a party that kids will love, this is it.  Several of my kids said it was their favorite.

These are very festive as well.

Mint-Dipped Oreos
Oreos.  I think they would be really good with double stuff.  I might try that next time.
Andes mints bits.  These are found by the chocolate chips.
Crushed candy canes (if desired)

Melt the the mint bits in the microwave for about 30 seconds.  Stir.  Dip oreos into the chocolate.  Make sure you let all the excess chocolate drain so it won't dry like some of ours did, with the chocolate overflowing.  Again, I did not micromanage Asher like I normally would.  I was tired :)  Put on wax paper and sprinkle some crushed peppermint on it.  Let dry.  I put mine in the freezer and they are delicious frozen.

Sarah, I actually melt one bag of Andes mint pieces with a bag of chocolate chips, then dip. Hmmm? I wonder which way is better. I think Double Stuf is a great way to try them. I'm glad they loved them!

Oh, my favorite way is in the freezer as well. Claire made some for us to deliver to K-Institute students and for the Kanakuk Christmas party tonight, and they were a hit!

Okay-- oh my gosh. I could have gone without reading this!!! THIS was the day I got a glorious nap!! So happy about my nap but sick I missed these cookies!!!!! Wish I had never clicked over. ; )
