25 days of cookies {Cookie 14}: Peanut Butter Balls

These were also on Elsie's famous cookie tray.  Classic, simple and tasty.  When I was making these I was thinking about all the people I know with peanut allergies and feeling bad for them.  Really.






Peanut Butter Balls
2 cups creamy peanut butter
1/2 cup butter
4 cups powdered sugar
3 cups rice krispies
2 cups semisweet chocolate chips

Melt peanut butter and butter in saucepan.  In large bowl combine powdered sugar and rice krispies.  Mix peanut butter mixture with cereal and powdered sugar.  Roll into balls (about 1 inch or smaller) and chill them in the refrigerator.  Melt chocolate in double broiler and dip chilled balls in chocolate and place back on a cookie sheet until dry.
