Salty, Crafty, and Sweet {Cranberry Salsa}

I had this salsa at a family gathering a couple of Christmas's past and stashed the recipe away.  This is the first time I've made it since and I'm so glad I did.  We are having a couple families over tomorrow night for Mexican food, and this is will be the perfect appetizer.
Especially with these Christmas chips.

It even looks pretty in the food processor.

And the cilantro gives it an extra holiday flare.


Cranberry Salsa 
12 oz bag cranberries
1 Granny Smith apple, peeled, cored and cut in eighths
1/2 red bell pepper, but into large chunks
1/2 medium red onion
3/4 cup sugar (I only used 1/2 cup and it was plenty sweet.  I may use 1/4 cup next time)
1/3 cup apple juice
3 Tbsp. fresh cilantro
2 Tbsp. chopped pickled jalapeno
1 tsp. grated lime vest

Put cranberries, apple, red pepper, and onion in food processor.  Pulse until chopped.  Transfer to large bowl.  Stir in remaining ingredients.

Have a fun Gathering with friends. The salsa looks fabulous. Save some for us. :) Can't wait to come. Pray for a safe trip.
